Pinsa Di Roma pizza bases are truly unique. The flour blend used in “Pinsa Di Roma” is based on an ancient Roman recipe discovered by the Roman army during their long conquests.

As their supplies dwindled, they experimented with rice flour and soy flour as substitutes for the traditional hard bread flour.
Although initially disappointed by the dough’s rise, they stretched and flattened it, creating a delightful texture: soft on the inside, crunchy on the outside, and full of flavor.

Today, modern Pinsa Di Roma flour uses a special blend of soy, rice, and soft wheat flours. With 80% hydration, this dough has significantly more water content than any traditional pizza dough, making it lighter and easier to digest. It also has fewer carbohydrates and less fat.
